How To Make Bacon-Infused Syrup

A rich simple syrup infused with bacon adds a delicious smoky flavor to your cocktails. Here we create the syrup and use it to make a bacon old fashioned. 




Bacon-Infused Syrup

  • 1/2 cup (100g) sugar
  • 1/4 cup (60ml) water 
  • 1 strip of cooked bacon
  • A large pot
  • A small saucepan
  • Ziploc bags
  1. Fill up large pot with water about 3/4 to the top
  2. Insert immersion circulator and set to 150 degrees F (65 C)
  3. Add water and sugar to saucepan, bring to a light boil, stirring frequently
  4. Remove saucepan from heat
  5. Cook bacon until crispy
  6. Add bacon and syrup to Ziploc bag
  7. Seal bag and leave in immersion circulator for 90 minutes
  8. Remove syrup and transfer to a small bottle
  9. Add a splash of vodka to help preserve the syrup
  10. Store in the refrigerator for up to 6 months

Cocktail Recipe

Bacon Old Fashioned

  • 2 oz (60ml) bourbon
  • 5-6 dashes of Angostura bitters
  • 1 barspoon of your bacon-infused syrup
  • Lemon twist
  • Half a strip of bacon
  1. Add bitters and bourbon to a rocks glass with ice
  2. Add the barspoon of syrup then stir for 15 seconds in the glass
  3. Express the lemon oils onto the drink and drop in the peel
  4. Garnish with the bacon and enjoy
