Mocktails Special: 3 Non-Alcoholic Cocktails

"Mocktails" are more than just cocktails stripped of their alcohol, they should be designed and balanced as their own drink. Here we make 3 of my favorite mocktails using fresh ingredients. 




Mocktail 1: Orgeat Lemonade

Orgeat

  • 200g unsalted almonds
  • 660g very hot water
  • 1/2 tsp salt
  • 500g sugar
  • 1.75g Ticaloid 210 S (Optional stabilizer)
  1. Add almonds, water, and salt to a blender
  2. Blend on high for 60 seconds
  3. Strain out solids using a nut milk bag or cheese cloth
  4. Add nut milk back into clean blender
  5. Add the sugar and Ticaloid compound
  6. Blend until combined, bottle
  7. Store in the fridge for up to one month

Orgeat lemonade

  • 1oz (30ml) fresh lemon juice
  • 3oz (90ml) water
  • 2oz (60ml) orgeat
  1. Combine ingredients into shaker tin with ice
  2. Shake for 15 seconds
  3. Double strain into collins glass with ice

Mocktail 2: Cucumber Sour

  • 4 slices of cucumber
  • 2 sprigs of oregano
  • 2 drops of saline solution (or a pinch of salt)
  • 1.5oz (45ml) fresh lime juice
  • 3/4oz (22.5ml) light agave nectar
  1. Add cucumber to shaker tin and muddle thoroughly
  2. Clap 1 sprig of oregano to release flavor and add to the tin
  3. Add the rest of the liquid ingredients to the tin
  4. Add ice and shake for 15 seconds
  5. Double strain into a rocks glass with ice
  6. Garnish with remaining sprig of oregano

Mocktail 3: Smoking Blackberry

Blackberry Syrup

  • 1/2 cup (120ml) water
  • 1/2 cup (120g) sugar
  • Heaping 1/2 cup of blackberries
  1. Add all ingredients to a saucepan and bring to boil
  2. Boil for 2 minutes, then reduce heat to simmer
  3. Simmer for 10 minutes while smashing the blackberries with a spoon

Smoking blackberry 

  • 1 small sprig of rosemary
  • 3/4oz (22.5ml) blackberry syrup
  • 1/2oz (15ml) fresh lime juice
  • 1oz (30ml) fresh orange juice
  • 4-5 drops of celery bitters
  • 2 fresh blackberries
  1. Torch the rosemary and invert a chilled Nick & Nora glass over the smoke, set aside
  2. Combine all other ingredients in a shaker tin and shake for 15 seconds
  3. Double strain into smoked glass
  4. Garnish with blackberries on a pick
