The Best Spiked Hot Chocolate

Boy was I excited for this one, the fat kid in me meets the booze connoisseur in a warm mug of delicious spiked hot chocolate. Here I make three different recipes, ranging from a campfire style, Mexican style, and a third version that was my hands down favorite.



EQUIPMENT

  1. Irish coffee mugs

  2. Cocktail set (includes Boston shaker, jigger, bar spoon, hawthorne strainer, fine mesh strainer, julep strainer, muddler, cocktail picks)

  3. Angled measuring jigger

  4. iSi cream whipper


Rum Hot Cocoa

Makes 1 Serving

  • 2 tablespoons (16g) unsweetened cocoa powder

  • 1.5 tablespoons (18g) sugar

  • 1 cup (235ml) whole milk

  • Pinch of salt

  • 1.5oz (45ml) dark rum

  • .25oz (7ml) creme de menthe

  • 2 Marshmallows

  1. Combine cocoa powder, sugar, salt and milk into a saucepan and bring to a simmer while whisking to combine

  2. Pour hot cocoa into a mug

  3. Add rum and creme de menthe and stir

  4. Garnish with marshmallows and brown them with a brûlée torch


Mexican Hot Chocolate

Makes 1 Serving

  • 1/4 tab (23g) of Mexican chocolate

  • 1 cup (235ml) whole milk

  • 2oz (120ml) heavy whipping cream

  • 1oz (30ml) reposado tequila

  • 1oz (30ml) Ancho Reyes

  1. Heat chocolate and milk in a saucepan until melted

  2. Pour hot chocolate into an Irish coffee mug

  3. Add tequila and Ancho Reyes and stir

  4. Add whipping cream into a shaker tin and shake until thickened

  5. Pour whipped cream over the back of a spoon on top of the hot chocolate

  6. Shave cinnamon over the top


Chartreuse Hot Cocoa

Makes 1 Serving

  • 1 tablespoon (8g) unsweetened cocoa powder

  • 1 cup (235ml) whole milk

  • 2oz (55g) semisweet chocolate

  • Pinch of salt

  • 1.5oz (45ml) Green Chartreuse

  • 1 cup (237ml) heavy whipping cream

  • 1 tablespoon (15ml) simple syrup

  • 1 teaspoon (5ml) vanilla extract

  • 6 dashes black walnut bitters

  1. Heat cocoa powder and milk in a saucepan

  2. Chop up chocolate and whisk into the cocoa over medium heat until melted

  3. Pour into Irish coffee mug

  4. Add Green Chartreuse into cocoa and stir

  5. In an iSi whipper, combine whipping cream, simple syrup, vanilla extract, and bitters and shake

  6. Add a NO2 charger and shake

  7. Dispense whipped cream over the top

  8. Shave the bittersweet chocolate over the whipped cream
