Turning Vodka Into Gin
In this video, I show you how to create a fresh compound gin out of vodka and select botanicals using a sous vide. The resulting gin is used to make a delicious gin & tonic inspired by the "Betony G & T" at Betony.

Equipment
Compound Gin
- 1 tsp juniper berries
- 2 cardamom pods
- 1/2 tsp coriander
- 1/4 tsp black pepper
- 1 pinch lavender
- 1/2 dried bay leaf
- 2 oz vodka
- Measure all botanicals and add to a ziploc bag
- Pour vodka into bag
- Seal bag, removing as much air as possible
- Add bag to hot water at (176°F) (80°C)
- Leave in hot water for 90 seconds
- Remove and place in ice water bath for at least 60 seconds
Fresh Gin & Tonic
- 2oz (60ml) of your compound gin
- 6oz (180ml) tonic water
- Juice of 1/4 lime
- Strain your compound gin into a collins glass with ice
- Add your tonic water
- Squeeze in juice from quarter lime wedge
- Stir and enjoy
