Turning Vodka Into Gin

In this video, I show you how to create a fresh compound gin out of vodka and select botanicals using a sous vide. The resulting gin is used to make a delicious gin & tonic inspired by the "Betony G & T" at Betony.




Compound Gin

  • 1 tsp juniper berries
  • 2 cardamom pods
  • 1/2 tsp coriander
  • 1/4 tsp black pepper
  • 1 pinch lavender
  • 1/2 dried bay leaf
  • 2 oz vodka
  1. Measure all botanicals and add to a ziploc bag
  2. Pour vodka into bag
  3. Seal bag, removing as much air as possible
  4. Add bag to hot water at (176°F) (80°C)
  5. Leave in hot water for 90 seconds
  6. Remove and place in ice water bath for at least 60 seconds

Fresh Gin & Tonic

  • 2oz (60ml) of your compound gin
  • 6oz (180ml) tonic water
  • Juice of 1/4 lime
  1. Strain your compound gin into a collins glass with ice
  2. Add your tonic water
  3. Squeeze in juice from quarter lime wedge
  4. Stir and enjoy
